Breads

Bakery 27 produces hand-made, sourdough artisan breads using traditional techniques. We employ the use of liquid levain, pate fermente, poolish, biga, soakers and more. Gluten-free pizza dough is currently available, rolled to a 10" diameter, sold frozen. Take home, thaw, top with you favorite sauce and toppings, allow to rise and bake.

Petit Fours

Petit fours include any small cake or pastry that can be eaten in one or two bites. They are typically served at the end of a meal, with afternoon tea, or for buffets and receptions. The term comes from the French meaning "small oven". This classification of pastries is broken down into three subgroups:

- Petits fours glace – traditionally refers to small iced cakes or glazed pastry
- Petits fours sec – a selection of dry cookies
- Petits fours frais – fragile, perishable items such as miniature fruit tarts, éclairs, cream puffs, cheesecakes, mousses, bouchons, savarins, etc. 

As a general rule, petits fours:
Are no larger than 2 - 2 1/2" in length
Are particularly festive when served in an assortment, including items from all subgroups. They are visually appealing in shape, color, and/or décor.
Consultation is recommended when ordering Petit Fours. A range of 2 1/2 to 3 1/2 pieces per person is the standard used for most events, keeping the selection at a minimum of 4 - 5 types. We sell Petit Fours by the piece or by the person for catered events, pick up or parties. Price varies according to the choice of pastry. Minimums do apply.
